What is Celiac disease? Celiac disease is a disease that affects 3 million people in the United States. When people who have Celiac disease consume the protein known as gluten (found in wheat, barley, and rye) their body kills the villi in their small intestine. This leads to the body being unable to absorb nutrients and in turn, malnourishment.
- Between 2-3 million Americans (or 1 in 100 people) are affected by Celiac disease, the majority of which haven't yet been diagnosed.
- Roughly 6% of Americans (or 18 million people) are allergic or sensitive to gluten.
- Over 25 million Americans choose a gluten-free diet for other health reasons. Therefore, the growth of the gluten-free food market has grown 17% within the last year.
